清朝有一种方便食品叫“耐饥丸”,做法如下:整半锅糯米,炒到发黄,倒石臼里晾着。再整半锅红枣,蒸熟后,去皮去核,也倒到石臼里晾着。然后用大杵使劲捣,把石臼里的糯米和红枣捣烂捣匀,捣成糊状,再挖出来,团成鸡蛋大的丸子,铺在苇叶上晒干。
One fast food of the Qing Dynasty is called “Naijiwan” (ball ensuring hunger). Cooking steps are as follows: prepare a half pot of sticky rice, fry to yellowing and air it in stone mortar; prepare a half pot of red dates, remove the peel and pit after steaming and then air in stone mortar; smash rice and red dates with pestle to even paste, make paste to balls similar the size of egg and dry on the reed leaf in the sun.
清朝人李化楠说,这种耐饥丸最能耐饥,吃一丸,保半天不饿。他在浙江余姚当县令的时候,曾经号召广大群众趁丰年多制些耐饥丸储备起来,遇上灾年无粮,可以取出救荒。
Li Huanan of the Qing Dynasty said that Naijiwan can endure hunger. Eating one can stave off hunger for half a day. When he served as the county magistrate in Yuyao, Zhejiang Province, he called the general public to produce more Naijiwans in good times to prepare for the worst.
明朝有一种方便食品叫“守山粮”,加工起来也挺容易:大萝卜洗净,剁掉根须,刮去青皮,摆锅里蒸熟,冷却后,倒盆里,捣成泥,挖进模子,脱成砖坯,摞起来,自然风干,然后用来筑墙。
A fast food in the Ming Dynasty is named “Shoushanliang” (food used in safeguarding). It’s easy to cook: clean radish, cut off the root hair, raze the green surface, stream radish in pot; after cooling down, pour radish into a pot and smash into paste; put paste in model to make adobe; pile up adobes and air dry them; then construct wall with adobes.
清代名医王士雄说,该食品主要是用来防兵防匪——哪天战火一起,全城戒严,老百姓不能出去采购,等到面缸见底、米囤空仓的时候,可以从墙上凿下一块砖来,扔锅里熬粥喝。此物贵能防守,所以叫“守山粮”。
Wang Shixiong, a famous doctor in the Qing Dynasty, said that this food was mainly used to defend soldiers and bandits – in case of flames of war when the entire city was imposed with a curfew, the common people couldn’t go for shopping. When they had no food in flour and rice container, they may pick up one brick from the wall and use it to cook gruel. As it can be used in defense, it’s dubbed as “Shoushanliang”.
