面条
Noodles
In spite of their humble appearance, long noodles conquered the appetites of Americans soon after the introduction of Chinese dishes. Americans like Chinese noodles as they can be combined with any kind of ingredient, thus catering to people’s unique needs and appetite. A bowl of noodles with soup can be completed with pork, vegetables, scallion, ginger, soy sauce and sesame oil. Those preferring sea food can add some shrimps and dried scallops etc. to the noodles. In a word, noodles are of excellent quality and reasonable price. Each takes what he needs from them. It is no surprise that there are many noodle houses all over Manhattan. There are also headlines in the food columns of American newspapers proclaiming: “people eating noodles and noodle houses are ubiquitous”.

馒头
The Steamed Bread
The history of Chinese people eating steamed bread can be traced back to the Spring and Autumn and the Warring States Periods. Steamed bread is a traditional Chinese cooked wheaten food, which is made by mixing the flour, water and sugar well and steaming after fermentation. In the regions in the south of lower reaches of the Yangtze River, there is a kind of steamed bread which is made by adding some meat, vegetables or fine bean mash known as the steamed stuffed bun. The steamed bread had spread into Japan as far back, even, as the Song Dynasty, and is gaining increasing popularity these days. “Chinese steamed breads” in Japan are not authentic steamed breads, but steamed stuffed buns with a variety of fillings. “Chinese steamed bread” sold in all supermarkets across Japan and they feature a variety of fillings, such as sweetened bean paste, meat, curry, fine bacon, walnut kernel, vegetables and shrimp etc. There are all kinds of “Chinese steamed bread” of different flavors.

Bean curd (Tofu)
Bean curd, or Tofu, has a history of more than twenty one centuries. It is well liked by Chinese people, the people from the neighboring countries and those across the whole world.
It is well known that the Japanese people like Chinese bean curd. These days they add fresh vegetable juice to bean curd, making a kind of “green bean curd” not only visually appealing but also rich in nutrition. In Germany, many people have the habit of cooking “braised bean curd with shrimp” and “cauliflower bean curd soup” etc. with Chinese flavors. Many Americans like to have “Mapo Tofu (bean curd with minced meat and chili oil)” and “stewed bean curd in earthen pot”, two dishes from Chengdu, China. When enjoying a meal in a Chinese restaurant, they often order the “braised beef in sauce”, the “curried chicken” and the “bean curd soup”. Therefore, the American Economic Perspectives believes that “in the future ten years, the most successful product with the greatest market potential is not a car, a television or electronic product, but Chinese bean curd”.
