江西菜又叫“赣菜”,是在继承历代“文人菜”的基础上发展而成的乡土味极浓的“家乡菜”。原汁原味是赣菜的最大特色,而赣菜之中最有代表性的就是赣南客家风味菜。
Jiangxi Cuisine is also called Gan Cuisine (Gan in Chinese stands for Jiangxi Province). Inheriting from the Wenren Cuisine (cuisines loved by literati), Jiangxi Cuisine has developed into a “Hometown Cuisine” with strong and distinct local characteristics. The most typical feature of Gan Cuisine lies in keeping the original flavor of food. The most representative Gan Cuisine is Southern Jiangxi Hakka Cuisine.

客家菜到底是什么味道,怎样才算正宗呢?用四个字足以形容———原汁原味。原汁原味的特点有三:一是选料讲究,只用野生家养粗种的食材,即没有污染的“绿色食品”,才能烹调出最原始的自然风味;二是烹调方法上多采用天然的制作方法,食物的营养才得以保全;三是极少添加或干脆不加过重过浓的佐料。
What is the genuine Hakka Cuisine? One word is enough to sum up—original. To cook Hakka cuisine, we must choose quality materials, which means organic food, to keep its original natural flavor, using healthy methods in cooking to preserve the nutrition of food, and avoid overtly salty and spicy seasonings.

客家人好客。在赣南的高山上,随便走进哪户人家,热情的主人都会请你喝茶,并拿出丰富的点心,这在客家话里叫做“伴茶”。在黄洋界,这种热情也被发挥得淋漓尽致。主菜上桌前,先奉上美味的小点“伴茶”。
Hakka people are very hospitable: every household on the high mountains in Southern Jiangxi will welcome you with tea and refreshments, which are called “Bancha” in Hakka dialect. In Huangyangjie, you can also enjoy lavish hospitality: before serving the main course, the host will first present you with the tasty snack food of “Bancha”.
尝完伴茶之后,按客家人的风俗,还要先吃一些餐前开胃小菜———庐山的石鱼嚼起来甘香无比;芋梗原来也可以腌制得鲜辣脆嫩;还有诱人的鲜香腐乳……“伴茶”小点有月亮花生粑、小金橘、杨梅等,都是客家人自己做的,非常可口。
After tasting “Bancha”, people should have some appetizers according to Hakka custom: delicious-smelling Shi Fish from Mount Lu; salted taro stem that is crispy, spicy, and tender; preserved bean curd that is invitingly delicious…The delicious refreshments are all home-made, and include such delights as Moon Peanut Cake, kumquats, waxberry fruits, etc.

Fried Fish of Ganzhou City
赣州风味小吃有很多,其中不得不提江西传统名菜赣州小炒鱼。黄洋界江西菜馆的小炒鱼风味独特,选用鲜草鱼,去掉鱼头鱼尾,劈成块状,加以生姜、四季葱、红椒、小酒(醋)、酱油、水酒等佐料烹饪而成。色泽金黄、味鲜嫩滑、鲜辣微酸,让人回味无穷。
Among the many local snacks of Ganzhou City, we have to mention a famous Jiangxi dish - Fried Fish of Ganzhou City. In Jiangxi-style restaurants of Huangyangjie, specially-flavored fried fish is cooked by removing the head and tail of a living grass carp, cutting it into pieces, and seasoning it with ginger, scallion, red peppers, alcohol (vinegar), soy sauce, and fermented wine. This dish has a gold color, and a tender, delicate texture. Its fresh taste and spicy, slightly sour flavor is really something that should not be missed.
飘香荷香肉
Pork Steamed with Lotus Leaves
荷香肉是赣州的又一特色美食,它是把梅花肉、米粉、香料等糅合在一起,再用荷叶包裹着放到笼子上蒸成的。剪开荷叶后,浓郁的肉香混着荷香袭来。吃上一口,柔软细滑的口感让人陶醉不已,嘴上的香味久久不能散去。
This is another classic dish of Ganzhou City, which is made by mixing pork collar-butt, rice flour, and spices, and steaming this mix with a lotus leaf as a wrapping. As soon as the lotus leaf is cut open, a delicious smell of pork and lotus leaf will overtake you. only a nibble of the soft and delicate dish will be intoxicating and leave you with a pleasant aftertaste.
