广式萝卜糕是广东人过年必备的贺年糕点,也是粤式茶楼的常见点心,口感软糯,风味独特。
Cantonese Turnip Cake is an important dish for the Cantonese in the Chinese Lunar New Year. It is also commonly served in Cantonese teahouses. It is very soft and tender and has a unique taste.
原料:
Ingredients:
自发粉3杯,白萝卜900克,腊肉(或香肠)200克,海米2大匙,盐1茶匙,胡椒粉少许,味精少许。
3 cups of self-leavening flour, 900g white turnip, 200g bacon (or sausage), 2 tablespoons of dried shrimps, 1 teaspoon of salt, some pepper powder and some MSG.
制作方法:
Preparation Procedures:
1.自发粉用3杯水调匀使之溶解成自发粉浆。
2.萝卜去皮刨丝;腊肉或香肠切丁;海米泡软切碎。
3.用3大匙油炒香海米及腊肉(或香肠)后,倒入萝卜丝同炒,并加水及调入盐、胡椒粉、味精。待烧开时,将自发粉浆慢慢淋入,炒成糊状。
4. 取一长方形蒸盘或容器,先抹少许色拉油再盛入自发粉头糊,抹平,放入蒸笼蒸50分钟。
5. 放凉后即可切片煎食,另备蒜蓉、酱油醼食。
1. Dissolve the self-leavening flour with 3 cups of water.
2. Peel the turnip and shave them into shreds. Dice the bacon (or sausage). Use water to soften the dried shrimps and cut them into small pieces.
3. Stir-fry the chopped shrimps and bacon (or sausage) with 3 spoonfuls of oil until the flavor develops. Put in the turnip shreds and add water, salt, pepper powder and MSG. When it boils, pour in the self-leavening flour solution slowly and stir-fry it until it becomes a paste.
4. Take out a rectangular container. Spread some salad oil on the bottom and then put the paste in. Steam it for 50 minutes.
5. Let it cool and slice it. Prepare some smashed garlic and soy sauce as condiments.
