百抖茶是云南凤庆独特的传统茶俗,也是云南新平彝族、傣族自治县群众一种颇具当地特色的饮茶方式。
The Shaken Tea is a traditional tea custom unique in Fengqing, Yunnan, and also a tea drinking method with strong local characteristics in Yi and Dai Autonomous Counties in Xinping, Yunnan.
在凤庆的村村寨寨至今仍然能品尝得到百抖茶的鲜香美味。每当客人到家里的时候,主人便会烧起火,把自己采摘加工的茶叶从箩筐里取出,先把小瓦罐放于火上烤热,再放入茶叶,然后边烘烤边轻轻抖动,直至茶叶颜色变黄,发出焦香气味时,再将其倒入杯内,用沸水冲泡饮用。第一杯不论你是远方的友人还是稀客,都必须由主人端给大坐中年龄最大的,然后才能端给客人。盛茶水的杯子是土制,上面染满茶的颜色,再清洗都无法洗掉,倒也平添了一种古色古香的味道。
In all of the villages in Fengqing, one can still enjoy the fresh and fragrant Shaken Tea. Whenever guests visit, the host will light a fire and take out the tea leaves they picked and processed from a bamboo basket. First, the host will put a small clay pot above the fire to roast it, and put the tea leaves into the pot. Second, they will shake it slightly while roasting it until the tea leaves turn yellow and smells slightly burnt. Third, the host will put the roasted leaves into a cup and pour in boiling water. Thus the tea is made. The first cup of the tea must be offered by the host to the oldest of all people seating cross-legged, whether you are a distant friend or an occasional visitor. After that, the guests will be offered tea. The tea cup is made of earth and is covered with tea stains, which, though impossible to clean gives a touch of an antique flavor.
须注意的是,茶叶如烤不到火候,就透不出特有的焦香,但如烘烤时间过长,则会导致茶叶焦糊而失去茶味。这就要求茶烤至恰到好处,故须经上百次的抖动而使茶叶受热均匀,这百抖茶名称也因此而来。
It should be noted that if the tea is not well roasted, it will not give out the unique aroma of burning. But if the tea is roasted for too long, it will result in burnt tea and loss of tea flavor. It means the tea needs to be roasted just enough, and therefore the tea leaves are subject to hundreds of shakings to ensure they are roasted evenly, and thus the Shaken Tea gets its name.
百抖茶的功夫在于一个“抖”字。抖是百抖茶的关键。要注意的是,抖时罐始终不离火苗,且要不紧不慢地科,以让茶叶在罐中受热均匀,既不焦,也不夹生,这样制作出的百抖茶才能剔其涩苦味,而入口香气四溢,舒心爽口。
The key of the Shaken Tea is “shaking”. It should be noted that the pot shall never be put away from the flames when it is shaken, and that it shall be shaken gently and evenly so that the tea leaves in the pot can be heated evenly, neither burnt nor half-roasted. In this way, the Shaken Tea remains sweet, without being bitter, and becomes fragrant, agreeable, tasty and refreshing.
凤庆百抖茶既是当地农村喜闻乐见的传统饮茶方法,又是当地群众用以治病的土方、良方。在百抖茶中滴入白酒几滴,可治风寒感冒;添上少许经火烧过的食盐,又可成为止泻的良方;而放入姜丝或姜片,又能治疗流感。
Fengqing Shaken Tea is a popular traditional tea drinking method in the local villages. In addition, it is also a traditional and effective cure used by local people for medical treatment. The Shaken Tea with a few drops of white spirit can cure colds; the Shaken Tea with a little salt burnt on fire can be an effective prescription for diarrhea; and the Shaken Tea with shredded ginger or ginger slices can cure the influenza.
凤庆百抖茶以其独特的制茶方式和浓郁的清香,成为凤庆县对外交往的一种别具特色的传统礼仪活动,当地经常以“百抖茶”的制作表演及“百抖茶”的品饮,招待各方来宾。
With its unique production method and rich fragrance, the Fengqing Shaken Tea has been a distinctive traditional ceremonial activity for Fengqing County when making foreign exchanges. The local people often entertain all guests by the performance of making the Shaken Tea and drinking it.
