譬如,泡茶时应把水烧到95度,但如果使用的是自来水则一定要烧开。95度的水温,可以在这时候把水里面所有的微量元素都激活了,用这种水泡茶,一定可以把茶的味道突显得最好。一般最好用活水来泡茶,而不要用自来水泡茶。为此,爱茶人喝茶用“山泉水”为最优。

But if running water is used, it shall be boiled. 95 degree temperature can activate all micro elements in water which can highlight the tea aroma when being used to make tea. Flowing water is better than running water in this respect. Therefore, tea lovers often use “spring water” when making tea.
同时需要对所有烧水的器皿有一个全面的了解,在品茶的时候,温度也有讲究。一般泡碧螺春用80度,龙井85度,但前提是这些都是从95度的水冷却下来的。在泡茶的投茶量上,也有标准。一般绿茶是3克,铁观音则是8克。最后在出茶上,也有讲究。现在市面上很多人泡大红袍,都说太难喝,其实是方法不当,若拿盖碗,取8克茶叶,水烧到95度再泡,再尝一尝就非同一般了。所以说,只有把茶读懂才能泡好茶,才能真正去享受。

So it makes sense to say that only by understanding tea, can one make good tea and enjoy the beauty of tea.
