Beijing Roast Duck

北京烤鸭当算是北京最著名的一道菜肴了,它已有一百多年的历史。北京烤鸭是以北京特产填鸭烤制而成, 它曾是中国元、明、清历代宫廷御膳珍品。后传入民间,成为京菜之首,誉满国内外。著名的全鸭席即以烤鸭为主菜设置的。在北京,全聚德烤鸭店的烤鸭最为著 名。它主要的几个大店是:北京和平门全聚德烤鸭店、前门全聚德烤鸭店和王府井全聚德烤鸭店。

吃烤鸭有很多讲究。首先是吃烤鸭的季节,真正吃烤鸭讲究的是春、秋、冬三季。冬春两季鸭肉比较肥嫩;而秋季天高气爽,无论温度、湿度都最适于制作烤 鸭。全聚德选购鸭子的饲养期不能超过90 天,鸭子重量为2,500克或3,000克为宜,烤好的鸭子一般在1500克左右。烤好后的鸭子要现片现吃,这时的鸭皮是酥的,肉是嫩的,吃在嘴里味道又 香又美。

此外,吃烤鸭的作料有三种:第一种是甜面酱加葱条,可配黄瓜条,萝卜条等;第二种是蒜泥加酱油,也可配萝卜条等。蒜泥可以解油腻,将片好的烤鸭蘸蒜 泥和酱油吃,在鲜香之中更增添了一丝辣意,风味更独特。第三种是白糖,有些人不喜欢吃葱,也不喜欢吃蒜,在这种情况下,可以将酥脆的鸭皮和鸭肉蘸上细细的 白糖来吃,这种吃法特别适于妇女和儿童。不过,最通常的作料儿还是甜面酱加葱丝。用筷子沾上一点甜面酱,抹在荷叶饼上,夹几片烤鸭片,放少许葱丝或黄瓜条 或萝卜条,将荷叶饼卷起来吃,可谓香极了。

另外,吃烤鸭的主食主要是荷叶饼,还有空心芝麻饼,有些人喜欢把葱丝蘸上甜面酱,然后放入芝麻空心饼内,吃起来感到格外过瘾。

Peking (Beijing) roast duck is one of Beijing's most famous dishes and its history can be traced back to over a century ago. Beijing roast duck is made from special force-fed duck. Once, the dish was part of imperial cuisine passed down through the dynasties of Yuan, Ming and Qing. After finding its way into common society, the duck was heralded as the epitome of Beijing cuisine and gained widespread fame throughout the world. There is a famous all-duck banquet with 108 duck dishes which uses the roast duck as the piece de resistance. Of all roast duck restaurants, Beijing's Quanjude roast duck restaurant enjoys premier status. Its main stores are: Beijing Hepingmen Quanjude roast duck restaurant, Qianmen Quanjude roast duck restaurant and Wangfujing Quanjude roast duck restaurant.

Duck afficionados are serious about this delicacy. First consideration is the ideal season for eating roast duck,being either spring, autumn or winter. The duck meat is more succulent in spring and winter; while the mild autumnal weather suits the cooking of roast duck in temperature and humidity. Quanjude selects ducks less than 90 days old, weighing between 2.5~3 kilograms, but after roasting the ducks weigh around 1.5 kilograms. once out of the oven, the duck is immediately sliced and eaten, while the skin is crisp and the meat tender, creating an incomparably delicious taste sensation.

In addition, roast duck can be eaten in three ways:with sliced leeks and plum sauce, and cucumber and radish cut into matchsticks; or with crushed garlic and soy sauce, sometimes also with radish. As crushed garlic takes away some of the greasiness, sliced roast duck with garlic and soy sauce adds a little zing to the mouthwatering duck. The third method is with sugar. Since some people don't like spring onions or garlic, the crisp duck skin can be enjoyed after a dip in fine white sugar-women and children are said to like this method. But the most common condiments are plum sauce and thinly sliced leeks. Take a little sauce with your chopsticks and spread it on the pancake. Add some roast duck slices and then some leek slices or cucumber and radish. Roll up the pancake and voila, you're ready for a scrumptious bite into China's culinary history.

To go with your roast duck, thin flat pancakes are often a staple food. Sometimes referred to as lotus leaf pancakes, or sesame pancakes that have been hollowed out, some like to stuff the pancakes with sauce-dipped leek slices. But, all in all, everyone has their own favorite way of devouring this delicious dish.
